Healthy Curried Hummus

Oh, sweet hummus- the most versatile of dips. From sandwiches to crackers and veggies, this healthy chickpea dip is a go-to for many. This recipe is not for authentic hummus…that requires time and amounts of olive oil that I just don’t want to give it. This is a flavorful, lower-fat version of hummus that has a touch of flare with curry powder. Feel free to use it as a base and add in fresh herbs, roasted garlic, or roasted red pepper!
Healthy Curried Hummus Recipe
Ingredients
4 cups cooked chickpeas, rinsed
1 tsp salt
1/4 cup fresh lemon juice (bottled juice will just not taste the same)
1/4 cup water, very hot
1 tbsp olive oil
1 large clove garlic or 2 small cloves of garlic, diced
Pinch of baking soda
1/4 tsp agave
1/2-3/4 tsp curry powder (start with the lower amount and add more to taste)
Directions
Blend all ingredients in a food processor, until smooth, scraping down the sides with a spatula as needed (this took my processor about 3 minutes). Taste and add salt if needed. Chill to let flavors blend for a couple hours and enjoy!
